I finally made use of the panini grill I got for my birthday and lately I've been obsessed with sandwiches. No sandwich was safe from the panini grill and that included a peanut butter and jelly sandwich.
There's not much of a recipe here but your favorite brand of peanut butter (Simply JIF for me), jelly/jam/preserve and some bread. I used clarified butter on the outside of the sandwich before grilling it. As you can see, the grill turned the inside into a gooey, yet delicious, mess. If you don't have a panini grill, you can easily do this on a griddle or pan on the stove top. It's quite good.
